Mike's Chicken Recipe
- 1 tbsp. soy sauce
- 2 tbsp. cooking sherry
- 1 teaspoon grated fresh ginger or possibly 1 teaspoon ginger
- 1 teaspoon grated lemon rind
- 1 teaspoon sugar
- Cut up 2 chicken breasts into 1/2 inch strips and place in bowl.
- Combine marinade in blender and beat till smooth.
- Pour over chicken strips.
- Marinade for 1 hour.
- Beat the egg whites till stiff then beat in flour and lemon juice.
- Drain chicken strips then dip them in batter and quick fry for 5 min till golden.
- Wok works great for this recipe.
