Creamy Beef Stroganoff Meatballs
- 1 Tbsp. oil
- 1 lb. (450 g) fresh mushrooms, quartered
- 1 onion, chopped King Sooper's 1 lb For $0.99 thru 02/09
- 2 cloves garlic, minced
- 1 cup Philadelphia Herb & Garlic Light Cream Cheese Product
- 1 cup 25%-less-sodium beef broth
- 1 Tbsp. Dijon mustard
- 1/2 tsp. dried thyme leaves
- 1/4 tsp. paprika
- 1 recipe Basic Meatballs
- 8 cups hot cooked egg noodles
- Heat oil in large deep skillet on medium heat.
- Add mushrooms, onions and garlic; cook 8 to 10 min.
- or until mushrooms release all their liquid, stirring frequently.
- Mix cream cheese product, broth, mustard, thyme and paprika until blended.
- Add to skillet; cook and stir 2 to 3 min.
- or until heated through.
- Add (baked) Basic Meatballs; stir to evenly coat with sauce.
- Simmer on medium-low heat 3 to 5 min.
- or until heated through, stirring frequently.
- Serve over noodles.
