Green & Gold Aussie Curried Sausages
- 2 Tbsp Butter
- 1 Tbsp Olive Oil
- 1 can Coconut Cream
- 2 Tbsp Curry Powder
- 3 Tsp Plain
- Corn Flour
- 1 Large Onion
- 4 to 6 Sausages
- 1 cup Peas
- 1 cup Corn
- 1-1/2 cup of Rice
- Heat a large pan or pot to a high heat and add 3 Tbsp Butter.
- Place the sausages into the pan and cook until they begin to gold.
- Remove the sausage from the pan and with tongs and a knife cut them into small pieces.
- Add 1 Tbsp of Olive Oil to the pot or pan and add the Onion, Peas & Corn.
- Once the onion has browned put the Sausages back into the pan.
- Add 2 Tbsp Curry Powder and the Can of Coconut Cream and stir.
- Now you may add the Flour to thicken the Curry.
- I generally use about 3 tsp to get to the consistency that I like but each to their own.
- Once you find the consistency you are happy with leave to cook on a low heat for another 5 - 10 mins.
- Serve with rice.
