Peri Peri Sauce
- 8 clove garlic (finely chopped)
- 125 ml vegetable oil
- 125 ml grape vinegar (red or white)
- 125 ml lemon juice
- 125 ml water
- 3 tsp paprika powder
- 3 tsp chilli powder
- 3 tsp salt
- 20 small hot chillies (finely chopped)
- Mix all the ingrediends together and blitz in a blender.
- The sauce can be used immediately but will improve with age and last in your fridge for months.
- You can use the sauce as a marinade, basting sauce or normal dipping sauce, salad dressing and on braaied food.
