Penne pasta with spicy tomato & mozzarella sauce

  1. Heat oil in saucepan (medium heat) and add onion and fry for 4-5 mins or until softened or beginning to colour
  2. Add garlic & chilling and continue to fry for 1-2 mins
  3. Pour in chopped toms, red wine vinegar, tomato puree, sugar & half of the basil leave and stir well
  4. Bring the mixture to simmer, continue to simmer for 18-20 mins or until sauce has thickened & reduced.
  5. Just before serving, stir in crumbled mozzarella & pasta, then spinkle over rest of basil & grated cheese.
