Penne pasta with spicy tomato & mozzarella sauce
- 2 tbsp Olive Oil
- 1 Onion (chopped)
- 3 clove Garlic (chopped)
- 1 Red chilli (de-seeded & chopped)
- 1 Tin chopped tomatoes
- 1 Splash Red Wine Vinegar
- 1 tbsp Tomato Puree
- 1 tsp Sugar
- 1 bunch Torn Basil Leaves
- 1 Salt
- 1 Ground Pepper
- 125 grams Mozzarella Ball crumbled
- 400 grams Dried penne pasta (cooked & drained)
- 1 Grated cheese to serve
- Heat oil in saucepan (medium heat) and add onion and fry for 4-5 mins or until softened or beginning to colour
- Add garlic & chilling and continue to fry for 1-2 mins
- Pour in chopped toms, red wine vinegar, tomato puree, sugar & half of the basil leave and stir well
- Bring the mixture to simmer, continue to simmer for 18-20 mins or until sauce has thickened & reduced.
- Just before serving, stir in crumbled mozzarella & pasta, then spinkle over rest of basil & grated cheese.
