Simple Enoki Mushroom Soup
- 50 grams Enoki mushrooms
- 1 Soup stock cube
- 400 ml Water
- 1/2 tsp Soy sauce
- 1 tsp Butter
- 1 dash Green onion (thinly sliced)
- 1 Coarsely ground black pepper
- Slice the stems off the mushrooms, and slice into 3 cm lengths.
- Heat the 400 ml of water and soup stock in a saucepan.
- Stir with a ladle, and add the mushrooms when the soup stock has dissolved.
- Once boiled, remove from the heat and mix in the soy sauce and butter.
- Pour it into bowls, sprinkle on some green onion, and season with black pepper to finish.
