Apricot Sunshine Breakfast Cake
- 8 apricots
- 14 cup shortening
- 1 12 cups flour
- 12 teaspoon salt
- 2 tablespoons butter
- 34 cup brown sugar
- 12 cup milk
- 2 teaspoons baking powder
- 1 egg
- 1 tablespoon cinnamon
- Heat oven to 375.
- Mix sugar, egg & shortening thoroughly.
- Stir in milk.
- Blend in flour, baking powder & salt.
- Melt butter.
- Sprinkle as much cinnamon over brown sugar as you wish.
- Halve and pit apricots.
- Place rounded side up in rows of four.
- You may need fewer or more apricots, depending on their size.
- Spread cake mixture over apricots.
- Bake 25-35 minutes.
- When done place plate over pan and flip cake out of pan.
- Serve warm.
