Teriyaki Sauce

  1. Place the garlic and ginger in a food processor.
  2. Puree to a fine consistency.
  3. In a saucepan place the oil and heat it on medium until hot.
  4. Add the pureed garlic and shrimp and saute in hot oil for 1 minute.
  5. Add the sherry and bring to a boil.
  6. Reduce heat and simmer until reduced by half.
  7. Add the sugar, coriander, cumin, soy sauce and pineapple juice.
  8. Simmer the sauce for 1 hour.
