Barbecue Sauce
- 1 tablespoon bacon fat or vegetable oil
- 1 large yellow onion, peeled and cut into 1/4-inch dice
- 1 cup ketchup
- 1/4 cup Worcestershire sauce
- 1 tablespoon malt vinegar
- 2 tablespoons molasses
- 2 teaspoons Creole mustard
- 1 teaspoon hot red pepper sauce
- 1/2 teaspoon salt, plus more to taste
- 1 teaspoon fresh lemon juice, plus more to taste
- Heat the fat or oil in a medium saucepan over medium heat.
- Add the onion and cook until soft, about 5 minutes.
- Add the remaining ingredients and stir to combine.
- Simmer for 15 minutes.
- Keep warm until ready to serve.
