Oyster RamakisA Seafood Version of Ramakis, Usually Made with Livers.
- 12 slices bacon, halved
- 24 fresh oysters, shucked
- 2 tablespoons chopped fresh parsley
- 1/2 teaspoon salt
- Cayenne pepper to taste
- Ground black pepper to taste
- Preheat the broiler.
- Lay one oyster on each strip of bacon.
- Top each with 1/4 teaspoon parsley, and sprinkle with salt, cayenne pepper, and black pepper.
- Roll the bacon strips up around the oysters.
- Place the ramakis on a broiler tray, position about 4 inches from the heat source, and broil until well browned, 7 to 8 minutes.
- Turn carefully and broil until the bacon is very crisp, 3 to 4 minutes.
