Grilled Pork Chops with Chipotle Sauce
- 2 tbsp. corn oil
- 1 md. white onion, peeled and chopped
- Salt and pepper, to taste
- 2 cups cored and chopped fresh tomatoes
- 1/2 cup water
- 2 dried chipotle chillies, to taste
- 1/4 cup chopped fresh cilantro
- 4 bone-in pork loin chops
- Chopped fresh cilantro, for garnish
- 4 lime wedges
- Heat oil in a saucepan at medium heat.
- Add onion, salt and pepper, stirring occasionally; cook until onions begin to brown at the edges.
- Add the chilies, tomatoes and water and simmer for 15 minutes.
- Preheat the grill to medium-hot.
- Taste and season sauce.
- Remove stems from chipotles (the hot part).
- Place sauce in a blender and puree.
- Season pork with salt and pepper.
- Grill about 5 minutes per side.
- Brush each side heavily with chipotle sauce and cook another minute or two.
- Garnish with lime wedges and chopped cilantro, and serve a dish of the chipotle sauce on the side.
