Grilled Pork Chops with Chipotle Sauce

  1. Heat oil in a saucepan at medium heat.
  2. Add onion, salt and pepper, stirring occasionally; cook until onions begin to brown at the edges.
  3. Add the chilies, tomatoes and water and simmer for 15 minutes.
  4. Preheat the grill to medium-hot.
  5. Taste and season sauce.
  6. Remove stems from chipotles (the hot part).
  7. Place sauce in a blender and puree.
  8. Season pork with salt and pepper.
  9. Grill about 5 minutes per side.
  10. Brush each side heavily with chipotle sauce and cook another minute or two.
  11. Garnish with lime wedges and chopped cilantro, and serve a dish of the chipotle sauce on the side.
