Inside-Out Spicy Pork Fajitas
- 6 whole Boneless Pork Loin Chops, Thinly Sliced
- 1/2 whole Fresh Squeezed Juice Of Lime
- 1/4 cups Olive Oil
- 1/2 cups Cilantro, Chopped, Plus Extra For Garnish
- 2 Tablespoons Paprika
- 1 pinch Pepper
- 1 pinch Salt
- 1/2 cups Sun Dried Tomatoes, Sliced
- 1/2 whole Small Onion, Diced
- 1 whole Medium Yellow Pepper, Stem And Seeds Removed, Then Sliced
- 1/2 cups Chipotle Peppers In Adobo Sauce, Sliced
- Pound pork chops to tenderize and flatten them to a wide shape.
- Place pork in large sealable bag(s) and pour in fresh lime juice, olive oil, cilantro, paprika, salt and pepper.
- Mix ingredients evenly coating the pork then put it into the refrigerator and let it marinate for about an hour (the longer the better).
- Slice sun dried tomatoes, onions, yellow pepper and chipotle into thin, evenly sized strips about 1/8 wide and set aside.
- After pork is finished marinating, pull them out of the bag and onto a sheet pan, laying each out separately.
- Place 2-3 pieces each of peppers, onions, sun dried tomatoes and chipotle on the flattened pieces of pork then wrap the pork around ingredients securing with a toothpick (be sure toothpick is easy to see to later remove).
- Preheat your grill to medium heat.
- Place the pork on the grill and grill until pork is totally cooked, turning once or twice.
- Since the pork is thin, this should take about 8 minutes total.
- But you can check to make sure its 155 F internal temperature.
- Remove it from the grill and let rest for 5 minutes.
- Then slice into medallions, sprinkle with some leftover chopped cilantro and serve on a flour tortilla.
