Adobo
- 1/2 cup cane vinegar *
- 1 head garlic crushed
- 1 tsp. fresh ground black pepper
- 1 bay leaf
- 2 tbsp. rock salt
- 1 cup dark soy sauce
- 1 tsp. sugar
- 1 lb. chicken, serving size
- 1 lb. pork, serving size
- 4 oz. sliced pork liver
- 1/2 cup water
- Combine all ingredients in a saucepan except water.
- Let soak for 45 minutes.
- Add water and mix well, simmer 1/2 hour, covered.
- (Don't open the lid, the acidity in vinegar will evaporate).
- Cook until a little oil is produced from the pork.
- Increase the heat for 5 more minutes.
- Serve with steamed rice.
