Adobo

  1. Combine all ingredients in a saucepan except water.
  2. Let soak for 45 minutes.
  3. Add water and mix well, simmer 1/2 hour, covered.
  4. (Don't open the lid, the acidity in vinegar will evaporate).
  5. Cook until a little oil is produced from the pork.
  6. Increase the heat for 5 more minutes.
  7. Serve with steamed rice.
