Spanish Chicken & Rice
- 1 Tbsp. oil
- 4 boneless skinless chicken thighs (1 lb.)
- 1 medium onion, chopped King Sooper's 1 lb For $0.99 thru 02/09
- 1 medium green pepper, chopped
- 1 can (14 fl oz/398 mL) Italian-style stewed tomatoes
- 1 can (10 fl oz/284 mL) chicken broth
- 1 cup frozen peas
- 1 tsp. crushed red pepper
- 1 tsp. ground turmeric
- 1-1/2 cups instant white rice, uncooked
- Heat oil in large nonstick skillet on medium-high heat.
- Add chicken, onion and green peppers; cook until chicken is cooked through, turning chicken and stirring vegetables occasionally.
- Add remaining ingredients; stir.
- Bring to boil; cover.
- Remove from heat.
- Let stand 5 min.
- Fluff with fork.
