Veggie Panini
- 8 slices whole wheat toast
- 4 -6 tablespoons cream cheese
- 2 -3 tablespoons kalamata olives
- 1 large garlic clove
- 12 tablespoon olive oil
- 2 teaspoons pesto sauce (store bought is fine)
- 1 red bell pepper, quartered
- 1 red onion, sliced
- 1 -2 zucchini, thinly sliced
- 1 cup mozzarella cheese (or other cheese of your choice)
- cooking spray
- Grill veggies on preheated grill coated with cooking spray.
- In food processor combine olives, garlic, pesto sauce, olive oil.
- It can be as smooth or chunky as you like.
- Spread 4 pieces of bread with cream cheese and top with olive spread.
- Top the olive spread with the grilled veggies, cheese and second piece of bread.
- Grill sandwiches till bread is golden and cheese is melted.
