My Mixed Up Veg Stir Fry
- 2 tbsp Olive Oil
- 2 clove Garlic Crushed
- 1/4 tsp Crushed Red Chilli Peppers
- 3 Shallots chopped
- 1 Red Onion chopped
- 200 grams Chestnut Mushrooms, sliced
- 2 medium Carrots peeled and sliced small longways
- 100 grams Green Beans boiled for 5 minutes first
- 1/2 can Chilli Beans
- 1/4 cup frozen Corn
- 1 tsp Dark Soya
- 1 tbsp Sweet Chilli
- 125 grams Bok Choy chopped in half
- 100 grams Grated Chedder Cheese
- 1 large Spring Onion chopped
- Ingredients
- Strain off the green beans and pat dry on kitchen paper
- Heat the oil in the wok or frypan , then add the shallots and chilli
- Add the Garlic and mix, then add Mushrooms mix then add the carrots, cook for 5 minutes .
- Add the green beans and the drained Chilli beans and mix
- Add the Chilli peppers and the corn and mix.
- After 3 mins add bok choy
- Transfer into an oven proof dish and sprinkle the cheese on top and melt for a couple of minutes
- All together it is frying for 10 -- 15 mins and 2 mins in the oven
- Sprinkle on top the Spring onion on top to Garnish.
