Stuffed Poblano Peppers
- 1 pound Hamburger Meat
- 3 whole Medium To Large Poblano Peppers
- 1 envelope Ranch Dressing Mix
- 1 cup Hot, Chunky Salsa
- 1 cup Shredded Colby Cheese
- 1 cup Shredded Pepperjack Cheese
- Broil or grill peppers to soften.
- Meanwhile, brown the hamburger meat.
- After peppers have roasted, halve and de-seed (peel if desired).
- Preheat oven to 375F.
- Drain hamburger and return to pan.
- Mix in Ranch dressing packet, salsa, and cheese.
- Adjust the amount of salsa and cheese to your preference.
- Fill peppers with the hamburger mixture.
- Bake for 10 to 15 minutes until cheese is melted and stuffing is browned.
