Harvey's Coconut Macaroons

  1. In a food processor or blender, process coconut until finely chopped; set aside.
  2. In a mixing bowl, beat almond paste until crumbled.
  3. Gradually add flour, sugar and coconut; mix well.
  4. Add eggs, one at a time; beat until smooth.
  5. Stir in nuts.
  6. Place dough in a pastry bag with a large star tip; pipe onto baking sheets covered with parchment paper or foil.
  7. Top with cherries.
  8. Bake at 350F for 15-20 minutes or until golden brown.
  9. Cool 5 minutes before removing to wire racks.
