Breast Of Chicken In Jalapeno Citrus Mar Recipe
- 4 x -(up to)
- 6 x Boneless skinless chicken breasts
- 2 x -(up to)
- 3 x Jalapeno chiles, seeded
- 1/4 c. Minced cilantro, or possibly italian parsley
- 1 whl lemon, (juice only)
- 4 x Cloves (medium) garlic
- 1 tsp Grnd cumin
- 1/2 tsp Kosher salt, (I use regular)
- 1/2 tsp Grnd black pepper
- 2 Tbsp. Extra virgin olive oil
- Combine marinade ingredients in blender.
- Marinate chicken in refrigerator up to 24 hrs.
- Remove chicken from marinade.
- Don't wipe.
- Bake, saute/fry, broil or possibly grill.
- Enjoy!
- Note: I do not like this very much baked, but it's great grilled.
- (kh) I also used some Chipotles for a nice earthy, smokey flavor and used some of my homemade "warm oil" instead of extra virgin olive oil.
