Shoo Fly Pie Recipe
- 2/3 c. brown sugar
- 1/2 c. flour
- 1 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 c. butter, softened
- 2 Large eggs
- 2/3 c. light corn syrup
- 1/3 c. molasses
- 1/2 teaspoon baking soda
- 1 c. hot water
- 1 c. raisins
- 1 unbaked 9 inch pie shell
- Combine sugar, flour, cinnamon and nutmeg in a bowl.
- Using a pastry blender, work in butter till mix is the texture of coarse meal.
- In a separate bowl whisk Large eggs, corn syrup and molasses till well blended.
- Dissolve baking soda in hot water and add in to egg mix.
- Sprinkle raisins in the pie shell and pour molasses mix into the shell.
- Top with 1/3 of sugar mix, sprinkling as proportionately as possible.
- Bake 25 min at 400 degrees.
- Filling will be soft but slightly crusty.
- Sprinkle with remaining sugar and bake another 5 min.
- Serves 8-10.
