Salted Maple Caramel Sauce

  1. Melt butter in heavy saucepan over medium heat.
  2. Add sugar.
  3. Whisk until sugar melts and mixture is thick and boiling, 2-3 minutes.
  4. Gradually whick in cream.
  5. Bring sauce to boil, whisking often.
  6. Boil until sauce thickens enough to coat spoon and is reduced to one cup, whisking ofter, 2-3 minutes.
  7. Remove from heat.
  8. Whisk in salt and extract.
  9. Cool.
  10. Store covered in frig.
