Salted Maple Caramel Sauce
- 14 cup unsalted butter
- 12 cup maple sugar
- 34 cup whipping cream
- 18 teaspoon kosher salt
- 5 drops imitation maple extract
- Melt butter in heavy saucepan over medium heat.
- Add sugar.
- Whisk until sugar melts and mixture is thick and boiling, 2-3 minutes.
- Gradually whick in cream.
- Bring sauce to boil, whisking often.
- Boil until sauce thickens enough to coat spoon and is reduced to one cup, whisking ofter, 2-3 minutes.
- Remove from heat.
- Whisk in salt and extract.
- Cool.
- Store covered in frig.
