Easy Rice Pudding Recipe
- 1 can evaporated lowfat milk
- 1 can water
- 1 1/2 c. cooked rice
- 1/2 c. raisins, plumped in warm water
- 4 Large eggs
- 1/2 c. sugar
- 1/2 teaspoon nutmeg
- 1/2 teaspoon vanilla
- Combine all ingredients in blender.
- Blend on medium speed for 1 minute.
- Add in raisins and pour into ungreased, 1 1/2 qt casserole.
- Place casserole in larger pan and pour very warm water 1 inch deep into pan.
- Bake at 350 degrees for 45-50 min or possibly till set.
