Decadent Narrow Ridge Chewy Energy Bars
- 1 cup equal exchange organic baking cocoa
- 1 cup warm honey (raw, or agave nectar)
- 1 cup warm nut butter (almond or peanut)
- 14-12 cup old fashioned oats (rolled)
- 1 cup roasted sunflower seeds
- 1 cup toasted sesame seeds
- 1 cup toasted pumpkin seeds (pepitas)
- 1 cup unsweetened grated coconut (optional)
- In a large warm bowl mix honey, nut butter, cocoa and rolled oats.
- Add nuts and seeds.
- Mix until dark and thoroughly moist.
- Put into a lightly sprayed 9 x 13 pan.
- Press down and smooth the top of the mixture until shiny.
- Cool completely.
- Cut into 60 bites, wrap individually in plastic wrap.
