Grilled Citrus Spritzer
- 4 lemons
- 4 oranges
- 6 wooden skewers, soaked in water 1 hour
- 14 cup liquid honey
- salt
- 2 12 cups white cranberry juice
- 2 12 cups medium dry white wine, chilled
- 1 cup carbonated water
- 3 ice cubes
- 8 sprigs of fresh mint
- Preheat barbecue and lightly oil grill.
- Slice one lemon and one orange into 1/2-inch thick slices.
- Divide the citrus slices between the 6 skewers.
- Cut remaining citrus fruits in half.
- Grill citrus slices untl caramelized and marked on both sides, about 2 minutes per side; remove.
- Grill citrus halves cut side down until well-caramelized and warm 5-8 minutes.
- Squeeze and strain the juice from the grilled halves into a pitcher.
- Stir in honey and a pinch of salt until dissolved.
- Add cranberry cocktail, wine, carbonated water and ice.
- To serve put a citrus swizzle stick and a mint sprig in each glass.
