Chicken with Apricots, Walnuts & Rice
- 1 tsp. canola oil
- 1/2 medium yellow onion, minced King Sooper's 1 lb For $0.99 thru 02/09
- 4 oz. boneless skinless chicken breast
- 1 tsp. very low-sodium chicken bouillon granules
- 1/3 cup apricot nectar
- 2 Tbsp. dried apricots, chopped
- 1/2 cup instant brown rice, uncooked
- 1/2 medium green pepper, sliced
- 2 Tbsp. PLANTERS Walnuts, chopped
- 8 fl oz (1 cup) drinking water
- Pour oil into large nonstick skillet on medium heat.
- Add onions and chicken; increase heat to high.
- Stir in 1 Tbsp.
- water and chicken bouillon granules; cook until chicken is browned and cooked through and onions are tender.
- Remove from pan and keep warm.
- Add apricot nectar, chopped apricots, rice, peppers, and 1/4 cup water to skillet; cover and bring to a boil.
- Reduce heat and simmer about 10 min.
- Remove from heat, place chicken on top of rice mixture and allow to sit 5 min.
- Sprinkle with walnuts when ready to serve.
- Serve meal with a glass of water.
