Strawberry & Goat Cheese Salad
- 1/4 cup coarsely chopped walnuts
- 2 Tbsp. maple syrup
- 3 cups tightly packed fresh spinach
- 1 cup baby arugula
- 1 cup sliced fresh strawberries Safeway 1 lb For $3.99 thru 02/09
- 1/4 cup Kraft Extra Virgin Olive Oil Fig Balsamic Dressing
- 1/4 cup crumbled goat cheese
- Cook nuts in skillet on medium heat 2 min.
- or until fragrant, stirring frequently.
- Stir in syrup; cook and stir 2 min.
- or until syrup is absorbed.
- Spread onto parchment-covered baking sheet; cool completely.
- Break up any large clusters.
- Combine spinach, arugula and berries in large bowl.
- Add dressing; toss to coat.
- Top with nuts and cheese.
