Peachy Cheesecake

  1. For Crust: Combine crumbs, suugar, butter& nuts, if using.
  2. Press into a greased 8x8x2 inch pan.
  3. Bake at 350 for 8-10 minutes.
  4. Cool.
  5. For Filling: Beat cream cheese and icing sugar until smooth& creamy;set aside.
  6. In separate bowl, using clean beaters, beat whipping cream until stiff; fold into cream cheese mixture.
  7. Stir in chopped peaches.
  8. Spread over cooled crust.
  9. For Topping: Stir 1/2 cup sugar into mashed peaches;let set until sugar dissolves, stirring occasionally.
  10. Dissolve gelatin according to package directions;stir into peach mixture.
  11. Spread over cream cheese filling.
  12. Refrigerate until set.
  13. May be topped with whipped cream if desired.
