Herbed Tomatoes, Chicken & Rice

  1. Heat dressing in a large skillet over medium heat.
  2. Add chicken and garlic; cover.
  3. Cook chicken on each side until browned.
  4. Remove from skillet; set aside.
  5. Add canned tomatoes and 1 cup of water to skillet.
  6. Stir in rice; bring to a boil.
  7. Reduce heat to low and simmer, uncovered, 10 min.
  8. Return chicken to skillet.
  9. Sprinkle with cheese; cover.
  10. Cook on low heat for 5 min.
  11. Top with fresh tomato and cilantro.
  12. Enjoy 1/2 cup strawberries per person for dessert.
  13. Serve meal with an 8 fl oz glass of water per person.
