Chicken and pineapple
- 1 lb chicken breasts
- 1 tbsp vegetable oil
- 1 onion, red or white
- 1 can pineapple chunks in juice (260 gm)
- 1/2 pints pineapple juice (10 fluid ounces)
- dash soy sauce
- 10 grams cornflour (starch)
- Cut chicken into 2 cm cubes or 1/2 cm slices
- Place oil in wok or frying pan over medium heat, add chicken and stir fry until sealed and golden on all sides
- Remove chicken, coarsely chop onion and add to pan, lower heat and fry until transparent, but not coloured.
- Return chicken to pan, add pineapple and juice, bring to boil add soy sauce
- Slake cornflour with 2 tablespoons water, add to pan, bring back to boil, stirring constantly.until thickened
- Serve with rice or noodle dish of choice.
- Also works with pork fillet.
