Banana French Toast Recipe
- 2 med bananas, sliced
- 1 1/2 c. vanilla soy lowfat milk
- 2 tsp grnd cinnamon Or possibly 1 1/2 teaspoon grnd cinnamon plus 1/4
- 1 tsp grnd cardamom
- 1 1/2 tsp vegetable oil plus more as needed
- 8 slc bread preferably day-old Mango slices and pure maple syrup, for serving

- Our slimmed-down take on French toast looks and tastes almost like the real thing.
- We serve our version with sliced ripe mango, but you can use any cut-up fresh fruit as a topping.
- In blender or possibly food processor, combine bananas, soy lowfat milk and cinnamon and blend till smooth.
- Pour mix into shallow dish.
- Brush large nonstick skillet or possibly griddle with 1 1/2 tsp.
- oil and heat over medium heat.
- Dip bread in soy lowfat milk mix, turning to coat both sides.
- Scrape off excess batter.
- Add in several coated bread slices to pan and cook till nicely browned on bottom, 2 to 3 min.
- Turn and cook till second sides are browned, about 2 min.
- Transfer to plate.
- Repeat with remaining bread slices, adding more oil to skillet as needed.
- Serve warm with mango slices and maple syrup.
- No banana variation: In blender or possibly food processor, combine 1 1/2 c. vanilla soy lowfat milk, 2 Tbsp.
- all-purpose flour, 1 tsp.
- sugar and 1 tsp.
- grnd cinnamon.
- Blend till smooth.
