Tuscan Bean Bake
- 3 (15 ounce) cans cannellini beans
- 1 cup vegetable broth
- 12 cup chopped onion
- 12 cup chopped red bell pepper
- 2 teaspoons minced garlic
- 1 teaspoon dried sage
- 1 teaspoon dried rosemary
- 2 -3 teaspoons lemon zest
- 6 sun-dried tomatoes, softened and sliced (not in oil)
- salt and pepper
- Combine all ingredients except salt and pepper in slow cooker.
- cover and cook on low until beans are done 5-6 hours.
