- 1 Beef Brisket (typically 3-4lbs)
- 2 cups KC Masterpiece Chipotle Lime Marinade (reserve 1/4 cup)
- 1/2 cup water
- 4 cloves garlic
- 1 jalapeno
- 2 medium onions
- 1 package of fresh coleslaw in the bag
- 1/4 c red wine vinegar
- 1 tsp sirachi
- 1T sugar
- 2 T canola oil
- 1tsp salt
- 1 tsp pepper
- 1 T chopped fresh basil
- flour tortilla shells
- Cut the garlic cloves in half and insert into the brisket.
- In a large roasting pan place 1 3/4 c Chipotle Lime Marinade by KC Masterpiece with 1/2 c water and add the brisket.
- Cover with press and seal and refrigerate for a minimum 30 minutes up to 6 hours.
- Shred when cool.
- Preheat oven to 350 degrees.
- Add onions, and the jalapeno that have been quartered to the pan and place in the oven.
- You want 1 1/2 hours for every pound depending on the size of your brisket.
- You can also do this on the grill, charcoal is best, and is great for game day while enjoying the starter food.
- Just be sure to save room for the main event.
- Use the same times but be sure and keep the temperature down.
- While your brisket is working its magic in the oven or on the grill lets get started on the slaw.
- I prefer a vinegar based slaw with a bit of spice.
- Mix the slaw, onion, siracha, salt, pepper, basil, oil, vinegar in a bowl and let sit in the fridge until you are ready to serve.
- Game day: heat the brisket briefly on the grill or in the oven with the remaining KC Masterpiece Chipotle Lime Marinade.
- Serve with the slaw and flour tortillas, dlicious and a game day winner!
