Cindy's Orange Bran Flax Muffins
- 1 12 cups oat bran
- 1 cup all-purpose flour or 1 cup whole wheat flour
- 1 cup wheat bran or 1 cup oatmeal
- 1 cup ground golden flax seed
- 1 tablespoon baking powder
- 12 teaspoon salt
- 2 oranges, quartered and seeded (do not peel)
- 1 cup brown sugar
- 1 cup buttermilk or 1 cup soymilk
- 12 cup olives or 12 cup canola oil
- 2 eggs
- 1 teaspoon baking soda
- 1 12 cups raisins (optional)
- 1 cup shredded coconut (optional)
- 1 cup fresh spinach (optional)
- Preheat oven to 375 degrees.
- Prepare two 12 cup muffin pans by lining with paper liners or spraying with cooking spray.
- In a large bowl, combine oat bran, flour, flaxseed, wheat bran, baking powder, and salt.
- Set aside.
- In a blender or food processor, combine oranges, brown sugar, buttermilk, oil, eggs, and baking soda.
- (if using spinach add to ingredients in blender).
- Blend well.
- Pour orange mixture into dry ingredients.
- Mix until well blended.
- Stir in raisins and/or coconut, if using.
- Divide batter evenly among muffin cups.
- Bake for 18 to 20 minutes or until a toothpick inserted in the center comes out clean.
- Cool in pans for 5 minute before removing to a cooling rack.
