Iz's Seriously Good Chili

  1. Place onion, pork, and beef into large heavy pot.
  2. I use my dutch oven.
  3. Brown on low heat.
  4. I don't drain, I am not looking for some low fat pansy stuff - I want chili!
  5. Dice up the roma tomatoes and add them in.
  6. Cook tomatoes down a bit.
  7. Put in beans and chilies.
  8. No...I don't rinse.
  9. Refer to step one for reason.
  10. Add tomato sauce and water.
  11. If you like thick chili add less.
  12. Thinner?
  13. You can figure it out...
  14. Finally the chili powder.
  15. First unscrew the lid, pull off that plastic piece with the holes and throw that in the trashcan.
  16. Next put some chili powder in.
  17. Don't be afraid of it, it's your friend.
  18. See picture for approximate amount.
  19. Pop a beer and settle down.
  20. This needs to simmer for a while.
  21. 60 minutes minimum.
  22. Add water or beer to maintain desired thickness.
  23. Throw a lid on it if you prefer.
  24. Oh and this gives you plenty of time to get those grilled cheeses made.
