Black Bean Dip

  1. Place beans in medium bowl & mash until smooth.
  2. Add sour cream, juice, garlic, and cumin; blend well.
  3. Mix in minced onion and cilantro.
  4. Season with salt and pepper to taste.
  5. Transfer to small bowl & refrigerate 30 minutes.
  6. Garnish with chopped scallions & serve.
