Applesauce Fruitcake Recipe
- 1 1/2 c. Sweetened applesauce
- 1/2 c. Shortening
- 1 c. Sugar
- 1 pkt (8 ozs.) pitted dates, sliced
- 4 ounce Minced pecans
- 1/2 lb Red cherries, halved
- 1/2 lb Green cherries, halved
- 2 c. Raisins
- 2 1/4 c. All-purpose flour
- 2 tsp Baking soda
- 1 Tbsp. Cinnamon
- 1/4 tsp Allspice
- 1/2 tsp Salt
- Grease and flour a tube pan and set aside.
- Combine applesauce, shortening and sugar together in a saucepan.
- Bring to a boil; boil for 5 min, stirring occasionally.
- Combine fruit and nuts in a large bowl, adding flour, soda, salt and spices and stir together.
- Mix in cooked mix till well moistened.
- Pour into the prepared pan and bake at 275 degrees for 2 hrs or possibly till done.
- Cold on a wire rack for 10 min.
- Remove from pan and cold completely.
- Yield:1 fruitcake
