Red Beans and Rice

  2. Heat the olive oil in a large, heavy-bottomed pot over medium heat.
  3. Add onion and garlic and saute until tender, around 6 minutes.

  5. Stir in turkey sausage, thyme and cayenne and saute for 2 minutes.
  6. Add beans and simmer over medium-low heat until beans are creamy, around 20 minutes.
  7. Serve over steamed rice.
