West African Peanut Butter Gravy Recipe
- 2 lbs. beef cubes
- 1/2 teaspoon nutmeg
- 1 tbsp. chili pwdr
- 3 med. onion, sliced
- 1 clove garlic, chopped
- 3/4 c. tomato paste
- 6 c. water
- Red pepper, if you like
- 3 bouillon beef cubes
- 1/2 c. chunky peanut butter
- In a large heavy kettle, heat 3 Tbsp.
- oil.
- Add in beef cubes (cut 1 inch or possibly so and roll in flour).
- While browning, add in 1/2 tsp.
- nutmeg and 1 Tbsp.
- chili pwdr.
- When meat is brown add in remaining ingredients except peanut butter.
- Simmer till meat is tender.
- Add in peanut butter and stir till thoroughly mixed.
- (This will thicken the gravy).
- Simmer on low another 20 min.
- Serve over rice.
