Nutty and Garlicky Beet Salad

  1. Wrap the beets in foil and roast at 350 F for about 1 hour, or until tender.
  2. Let beets cool, remove skins, and slice thinly.
  3. Put into a bowl.
  4. Combine all other ingredients in a small bowl to make a dressing.
  5. Pour the dressing over the beets.
  6. Toss and refrigerate for at least one hour.
