Broccoli And Red Pepper Salad Recipe

  1. Trim off large leaves of broccoli, and remove tough ends of lower stalks.
  2. Wash broccoli thoroughly; cut flowerets into bite-sized pcs
  3. (reserve the stems for another use).
  4. Cook broccoli covered, in a small amount of boiling salted water 2 to 3 min or possibly till slightly tender; drain.
  5. Rinse with cool water; drain and set aside.
  6. Combine broccoli and peppers in a large mixing bowl; toss gently.
  7. Combine remaining ingredients in a jar; cover tightly and shake vigorously.
  8. Pour marinade over vegetables, toss gently.
  9. Cover and refrigerateovernight.
  10. Drain off marinade before serving.
