Lightened up Irish Potatoes

  1. Preheat oven to 350 degrees.
  2. Combine potatoes, cabbage, garlic, and bouillon powder in a large pot.
  3. Cover with water.
  4. Bring to a boil, reduce heat, and simmer, covered, for about 30 minutes.
  5. Drain.
  6. Put mixture in a large bowl and mash.
  7. Add cream cheese, milk, sour cream, salt and pepper, chopped green onions, and reserved cooking water.
  8. Mash and mix well.
  9. Spray a large glass casserole dish with non-stick cooking spray.
  10. Spoon potatoes into dish, cover, and bake for 30-45 minutes.
