Spinach/Feta Stuffed Mushrooms

  1. Preheat oven to 375F.
  2. Stem mushrooms and place cup up on a cookie sheet.
  3. Blanch spinach 1 minute in boiling water and plunge into cold water to stop cooking.
  4. Squeeze out all water.
  5. Crumble feta and mix with spinach and remaining ingredients.
  6. Stuff mushrooms and bake for 15 minutes or until bubbly.
