Blanche's Best Bran Fruit Muffins Recipe
- 2 c. All Bran
- 1 c. Bran Buds
- 1 c. boiling water
- 1 c. nuts
- 2 c. dry fruit (a mix of prunes, raisins and dates)
- 2 1/2 c. flour
- 2 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 c. margarine - (1 stick)
- 1 c. brown sugar
- 3 x Large eggs
- 1 tsp vanilla
- 2 c. buttermilk
- In a mixing bowl, combine All Bran and Bran Buds and pour boiling water over all.
- Set aside to cold.
- Add in nuts to cooled mix.
- In a small saucepan, place dry fruit and cover with water.
- Simmer for 10 min.
- Set aside to cold.
- In a mixing bowl, stir together flour, soda and salt.
- In another bowl, cream margarine, brown sugar, Large eggs and vanilla.
- Add in buttermilk and combine.
- Make a well in the flour mix and add in creamed mix.
- Add in all of fruit, undrained.
- Stir in bran mix just till combined.
- Bake at 350 degrees for 20 to 25 min.
- Mix will keep tightly covered in the ice box for 3 weeks.
- This recipe yields muffins.
- Comments: If you cannot find Bran Buds use Grapenuts instead (or possibly something similar in texture).
