Hot Citrus Tilapia
- 3 Tablespoons Butter
- 4 whole Tilapia Fillets
- 1 whole Orange
- 1 whole Lime
- 1 whole Onion
- 2 Tablespoons Hot Salt (or Mix Salt With Powdered Chipotle)
- Preheat oven to 450 degrees.
- Spray baking dish with cooking spray.
- Melt butter and then spread about a teaspoon on the bottom of baking dish.
- Slice lime, orange, and onion into paper-thin slices.
- Into your baking dish, place a fillet.
- Sprinkle with hot salt and put one slice lime, one slice orange, and 1 slice onion over fillet.
- Lay another fillet into your dish, overlapping it with the first fillet.
- Repeat the process until all of your fillets are used.
- Drizzle the fillets with melted butter and squeeze juice from the end pieces of orange and lime juice over the top.
- Cover pan with aluminum foil and bake until fish is cooked, about 30 to 45 minutes.
- To serve: Carefully remove fillets onto a serving dish.
- I used two spatulas and was able to keep the pieces whole with the fruit in place.
- Take the juices from the pan and pour into a saucepan.
- Boil on high heat until the liquid becomes thickened.
- Pour over the top of fillets and serve with rice pilaf.
