Turkey Minestrone Soup Recipe

  1. Heat butter and oil in Dutch oven over medium-high heat till butter is melted.
  2. Crumble turkey into Dutch oven.
  3. Stir in onion and garlic.
  4. Cook till turkey is no longer pink.
  5. Stir in broth, cabbage, carrots, zucchini, tomatoes, and basil; cut up tomatoes.
  6. Salt and pepper to taste; reduce heat.
  7. Simmer till vegetables are tender, about 15 min.
  8. Stir in beans and parsley.
  9. Simmer till heated through.
  10. Yield 8-10 servings.
