Polenta-Sausage Stacks
- 1 log precooked polenta
- 4 small ripe tomatoes
- 1 lb. sweet or hot Italian-sausage links
- 1 package sliced fresh mushrooms
- 1 c. mozzarella cheese
- Preheat broiler.
- Spray large cookie sheet with nonstick cooking spray.
- Place polenta and tomato slices on cookie sheet.
- Place cookie sheet in broiler at closest position to source of heat and broil 10 to 12 minutes or until polenta is golden on top and tomatoes are soft.
- Meanwhile, heat nonstick 12-inch skillet over medium-high heat until hot.
- Add sausage and mushrooms and cook 8 minutes or until sausage is browned, breaking up sausage with side of spoon.
- Skim off fat.
- Remove skillet from heat.
- Sprinkle mozzarella over sausage mixture; cover and let stand 1 1/2 minutes or until cheese melts.
- To serve, place 2 polenta slices on each of 4 dinner plates.
- Top with tomato, then sausage mixture.
