Slow Cooked Brisket - Sloppy Joes
- 1/2 tablespoon olive oil, extra-virgin
- 1 large green bell peppers seeded and diced
- 1 each jalapeno pepper or to taste, seeded and minced, optional
- 14 ounces tomatoes 1 can, diced and drained
- 2 1/4 teaspoons chili powder
- 1 x salt to taste
- 3 cups beef brisket slow-cooked, recipe see link below
- 2 1/4 cups gravy from brisket, or as needed
- 1 1/2 tablespoons molasses
- 2 1/2 tablespoons brown sugar
- 4 each buns whole wheat or onion, split and warmed
- Heat oil in a large saucepan over medium heat.
- Stir in bell pepper and jalapeno (if needed) and cook, stirring frequently, until softened, about 4 minutes.
- Stir in tomatoes, chili powder and salt and cook for 1 to 2 minutes.
- Stir in brisket, gravy, molasses and brown sugar, stir well.
- Cover and simmer for 10 to 15 minutes to meld flavors.
- Warm the buns and serve on top of the buns.
