Healthy Brownies

  1. Preheat oven to 375F.
  2. Oil an 8 x 11-inch baking pan.
  3. Melt chocolate and butter in a heatproof bowl over a saucepan of boiling water.
  4. Add sugar to the hot coffee, making sure it dissolves.
  5. Let it cool, then beat in the eggs.
  6. Combine the remaining ingredients together in a bowl.
  7. Add melted chocolate to the egg mixture and combine well.
  8. Fold into the dry ingredients.
  9. Pour batter into pan and bake in oven for about 45 minutes, or until just firm to the touch.
  10. Cut into squares and serve warm or room-temperature.
