Filipino Kutsinta (Sticky Brown Rice with Shredded Coconut Topping)
- 3 cups Water, Plus More For Steamer
- 1- 1/2 cup Rice Flour
- 1/2 cups All-purpose Flour
- 1 cup Brown Sugar
- 1 teaspoon Anatto Powder
- 1/4 cups Milk
- 1- 1/2 teaspoon Lye Water
- Grated Coconut, For Garnish
- Boil water for the steamer.
- In a mixing bowl, sift all dry ingredients.
- Combine 3 cups water and milk in a separate bowl.
- While mixing the dry ingredients, slowly add the water-milk mixture until all ingredients are completely distributed and lump-free.
- Add lye water, then continue mixing.
- Fill small muffin pans halfway.
- Steam for 1020 minutes.
- Serve kutsinta with grated coconut.
