Wheat Germ Batter Bread Recipe
- 2 3/4 c. all-purpose flour
- 2 packets active dry yeast (or possibly 2 cakes compressed yeast)
- 1/2 c. wheat germ
- 1 1/2 teaspoon salt
- 1 c. hot water
- 1/4 c. molasses
- 2 tbsp. shortening
- 1 egg
- No kneading necessary!
- In a large mixer bowl combine 1 1/2 c. flour, yeast, wheat germ and salt; mix well.
- Add in water, molasses, shortening and egg.
- Blend at low speed till moistened; beat 3 min at medium speed.
- By hand, gradually stir in remaining flour to make a stiff batter.
- Cover; let rise till light and doubled, about 1 hour.
- Stir down batter.
- Spoon into greased 9 x 5 inch loaf pan or possibly 1 qt casserole.
- Cover; let rise in hot place till light, about 45 min.
- Bake at 350 degrees for 35 to 40 min till deep golden.
- Remove from pan.
- Brush with butter.
- Cold.
- Delicious toasted.
